No-bake, protein-packed peanut butter energy bites that taste like rich peanut butter cookie dough with an irresistibly chewy texture.  These wholesome bites are loaded with nutritious ingredients like flaxseed, chia seeds, and oats, they offer sustained energy and nourishment—making them an easy, healthy snack to take with you wherever your summer adventures lead.


The natural fiber found in flaxseed, chia seeds, and oats, combined with favorable complex carbohydrates, supports a slow and steady release of energy. Ingredients

Natural drippy peanut butter – 1/2 cup

Honey or date syrup – 1/4 cup

Vanilla Extract – 1 tsp

Protein Powder (optional) - 1/3 cup

Flaxseed Meal - 1/3 cup

Rolled oats - 1/2 cup

Cinnamon- 1/2 tsp

Chia Seeds - 1 Tsp

Mini Chocolate Chips - 1 tsp

Unsweetened Shredded Coconut (Optional)- 1/4 cup


Instructions


In a food processor, add in the peanut butter, honey, vanilla, protein powder, flaxseed meal, oats, cinnamon and chia seeds. Pulse together until well combined. 


Add in chocolate chips (and coconut if using) and pulse a few more times. 


Use a medium cookie scoop or your hands to grab dough and roll into 10 balls, place in an airtight container.  To use on the trail, wrap each individually in wax paper.
