š„§ A delicious Thanksgiving-inspired dessert thatās rich in fiber, omega-3s, and flavor ā with almost no added sugar.
Ingredients
1 cup unsweetened pumpkin puree
1 cup unsweetened almond milk (or coconut milk)
3 tbsp chia seeds
1ā2 tbsp monk fruit or stevia (adjust to taste)
1 tsp pure vanilla extract
1 tsp cinnamon
1ā4 tsp nutmeg
1ā4 tsp ginger
Pinch of sea salt
Directions
Whisk all ingredients together in a bowl until smooth.
Let sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 4 hours or overnight.
Stir before serving ā top with a dollop of unsweetened whipped cream or Greek yogurt and a sprinkle of cinnamon.
Optional twist: Fold in a spoonful of crushed pecans or toasted coconut flakes for texture.
