Recipe: Healthy Pumpkin Muffins

š± Ingredients
1 3ā4 cups whole wheat flour (or half oat flour)
1 tsp baking soda
2 tsp pumpkin pie spice (or cinnamon, ginger, nutmeg)
1ā2 tsp salt
1ā2 cup pumpkin purĆ©e (unsweetened)
2 eggs (or flax eggs for plant-based)
1ā2 cup unsweetened applesauce
1ā3 cup maple syrup or honey
1ā4 cup olive oil or melted coconut oil
1 tsp vanilla extract
1ā2 cup unsweetened almond milk (or milk of choice)
Optional: 1ā2 cup walnuts/pumpkin seeds, 1ā4 cup dark chocolate chips, or 1ā4 cup dried cranberries

Preheat oven to 350°F. Line or grease 12 muffin cups.
Whisk dry ingredients in a bowl: flour, baking soda, spices, salt.
In another bowl, mix wet ingredients: pumpkin, eggs, applesauce, maple syrup, oil, vanilla, milk.
Combine wet + dry until just mixed. Fold in optional add-ins.
Scoop batter into muffin cups.
Bake 18ā22 min, until a toothpick comes out clean.
Cool and enjoy!
