Food as Medicine - Wild Garlic Pesto
A vibrant, nutrient-rich pesto packed with antioxidants, vitamin C, and sulfur-containing compounds that may support heart health, immune function, and healthy inflammation.
Ingredients
5 oz (150 g) fresh wild garlic leaves (ramsons), washed and roughly chopped
1 garlic clove, finely chopped
½ lemon, zested, plus a squeeze of juice
1¾ oz (50 g) grated Parmesan cheese
1¾ oz (50 g) pine nuts, lightly toasted
⅔ cup (150 mL) olive or rapeseed oil
Salt and freshly ground black pepper, to taste
Directions
Wash and roughly chop the wild garlic leaves.
Add the wild garlic, Parmesan, garlic, lemon zest, and pine nuts to a food processor. Pulse until finely chopped.
With the processor running, slowly drizzle in the oil until smooth and creamy.
Season with salt, pepper, and a squeeze of fresh lemon juice to taste.
Transfer to a clean jar and cover the surface with a thin layer of oil. Refrigerate for up to 2 weeks.
Serving Suggestions
Toss with warm pasta.
Spread on sandwiches or wraps.
Spoon over grilled chicken or fish.
Mix into roasted vegetables.
Use as a dip for fresh vegetables or crusty bread.
