Lemon Herb Baked Salmon with Sautéed Mushrooms & Egg Yolk Sauce (High in natural Vitamin D + healthy fat)
Why This Is High in Vitamin D
Wild salmon (3–4 oz) → ~600–1,000 IU
UV-exposed mushrooms (½ cup) → 200–400 IU
Egg yolk (1–2) → ~40–80 IU

Ingredients (Serves 4)
Salmon
4 wild-caught salmon fillets
2 tbsp olive oil
Juice of 1 lemon
3 cloves garlic, minced
Fresh dill or parsley
Sea salt & pepper
Mushrooms
2 cups UV-exposed mushrooms (look for “Vitamin D mushrooms”)
1 tbsp grass-fed butter or olive oil
1 clove garlic
Egg Yolk Drizzle
2 pasture-raised egg yolks
1 tbsp olive oil
Pinch sea salt
Splash lemon
Instructions
Preheat oven to 400°F.
Place salmon on lined baking sheet. Drizzle with olive oil, lemon, garlic, herbs, salt, pepper.
Bake 12–15 minutes (until flaky but moist).
While baking, sauté mushrooms in butter/olive oil 5–7 minutes until golden.
Soft boil eggs (6 minutes), remove yolks, whisk with olive oil + lemon + salt until silky.
Plate salmon over mushrooms and drizzle egg yolk sauce on top.
