Lemon Herb Baked Salmon

Lemon Herb Baked Salmon with Sautéed Mushrooms & Egg Yolk Sauce (High in natural Vitamin D + healthy fat)


Why This Is High in Vitamin D  

  • Wild salmon (3–4 oz) → ~600–1,000 IU  

  • UV-exposed mushrooms (½ cup) → 200–400 IU  

  • Egg yolk (1–2) → ~40–80 IU  

One serving can easily provide 800–1,200+ IU naturally, depending on sourcing.  


Ingredients (Serves 4)  


Salmon  

  • 4 wild-caught salmon fillets  

  • 2 tbsp olive oil  

  • Juice of 1 lemon  

  • 3 cloves garlic, minced  

  • Fresh dill or parsley  

  • Sea salt & pepper  


Mushrooms  

  • 2 cups UV-exposed mushrooms (look for “Vitamin D mushrooms”)  

  • 1 tbsp grass-fed butter or olive oil  

  • 1 clove garlic  


Egg Yolk Drizzle  

  • 2 pasture-raised egg yolks  

  • 1 tbsp olive oil  

  • Pinch sea salt  

  • Splash lemon  


Instructions  

  1. Preheat oven to 400°F.  

  2. Place salmon on lined baking sheet. Drizzle with olive oil, lemon, garlic, herbs, salt, pepper.  

  3. Bake 12–15 minutes (until flaky but moist).  

  4. While baking, sauté mushrooms in butter/olive oil 5–7 minutes until golden. 

  5. Soft boil eggs (6 minutes), remove yolks, whisk with olive oil + lemon + salt until silky.  

  6. Plate salmon over mushrooms and drizzle egg yolk sauce on top.
